Cooking show fans remember Chef Hosea Rosenberg as the winner of season five of Bravo TV’s Top Chef: New York – Season 5. I know him from when we stood in a food truck together as he made me fish tacos and talked about the restaurant he was about to embark on. That restaurant, Blackbelly Market, came to be and I had every intention of making it up to Boulder to try it out but I was always in Boulder during the wrong hours. Finally and happily, I got to visit Chef Hosea’s newly-expanded Blackbelly venture, Blackbelly Butcher, having taken over the vacated space next door.

The expansion, Blackbelly Butcher, allows for one room to be the butcher shop, market, kitchen, more casual eating area and access to a back patio (there’s also a patio out front). The original area, Blackbelly Market, is now a striking dining room and bar. My, how far Chef Hosea has come from having only his food truck! Blackbelly has a whole animal butchery program featuring custom cuts, fresh sausages, bacon, salumi and charcuterie in a modern facility but with an old-world approach.

Whatever the cut of meat or sausage, you can be assured it is fresh and locally sourced at Blackbelly Butcher.
We watched Head Butcher Nate Singer reveal select cuts of meat gracefully, his knife moving through the vertically-hanging meat like butter. He stopped for a few minutes to tell us about getting his start butchering as a kid. He spoke with passion and respect for the animal. See our video of Nate and his apprentices in action below.

Besides the butchery offerings in the new space, breakfast and lunch service are also provided over there. People can eat in or grab-n-go from the Blackbelly Butcher cold case stocked with pre-made sandwiches and fresh salads as well as soups, terrines, sauces and more. Hosea and his team have also stocked the shelves with house-made sundries including brine kits, rubs, pickled vegetables, jams and more. This part of the business is open for breakfast from 7am. Starting at 4pm, Blackbelly Market, in the original space, opens for dinner only including a happy hour from 4-6pm. A salumi bar with counter season lets guests enjoy fresh sliced meats and cheeses. All menus are founded on locally-sourced, sustainable, organic food. Blackbelly Butcher is located at 1606 Conestoga St. #3 in Boulder.
