I have very fond memories of the Bucket O’ Shrimp I enjoyed at my first visit to Rusty Bucket. I was so impressed by the plump, firm shrimp and the delicious flavor. So when Rusty Bucket offered the In Good Taste Denver team the recipe for said Bucket O’ Shrimp to share with our readers, we jumped at it. What we loved about this shrimp was that the ingredients brought out the best in the crustacean instead of overpowering it. This recipe comes just in time for National Shrimp Day on May 10. But you’ll be making up big buckets full all summer long, we’re sure. Thank you, Rusty Bucket!
Rusty Bucket’s Shrimp Boil and Bucket O’ Shrimp
- 2 ½ gallons water
- 1 stalk celery, rough chop
- 2 onions, quartered
- ½ cup Old Bay Seasoning
- 4 lemons, quartered
- ¼ cup salt
- 8 pounds shrimp
Directions: Place all ingredients in a stock pot and bring to a boil. Simmer for 10 minutes. Place thawed, rinsed shrimp in colander and cook for 3-4 minutes until they are firm. When cooked immediately plunge in an ice bath to stop the cooking. When cool, drain well and portion to 8 ounces.
Bucket O’ Shrimp
- 8-oz. shrimp, cooked
- 1-oz. cocktail sauce
- Lemon wedge
- 1 Tablespoon Old Bay Seasoning
- ½ teaspoon parsley
- 1-oz. Louie Sauce
Directions: Toss shrimp with Old Bay and place on ice in bucket. Garnish with a 1-oz. ramekin of cocktail sauce. Finish with lemon wedge and sprinkle of chopped parsley.
Just imagine hosting a get together this summer with these shrimp in one bucket of ice, a bunch of cold Colorado beers in another really big bucket of ice, some crusty bread, corn on the cobb… Mmm, mmm!
