Emmerson, the newly-opened restaurant on Pearl Street has two New York City transplants helming the kitchen and cocktail curator Nancy Kwon behind the bar. For the holidays, the award-winning Kwon offers up the Leonardo’s Smoke, a cocktail that’s a vintage throwback with a modern feel. We’re fans of smoked cocktails so this one really appealed to us. Made with 114 Old Grand-Dad Bourbon, and Amaro Sfumato Rabarbaro, there are also hints of Cocchi di Torino Vermouth along with Benedictine, bitters, and a house-made Demerara syrup. The cocktail is served with dramatic flair: smoke from a cold-smoke gun is blown over the finished cocktail under a cloche and when the cloche is removed at the table, guests are treated to the sudden aroma and smoke of the cocktail.
