7 Leguas Mexican Grille – anonymous
Eggs are mixed with onions, jalapenos, tomatoes and potatoes, smothered with green chile and cheese. Cheese or ham can be added. 

Bonfire Burritos in Golden Chris Stevens (on X @colochriststevens) and Janice Sakata-Schultze (The Sansei Traveler and IGTD contributor)
With three levels of green chile heat, and available in burritos or bowls, Bonfire has multiple options including The Deluxor, Chupacabra, Javelina and vegan-approved Bon-Asaurus. Janice notes that they “are always made to order and always taste great.”

 

 

Cake Crumbs – anonymous
The Bake Shop Breakfast Burrito has scrambled eggs, roasted red peppers, cheese and vegetarian green chile. Add bacon and salsa and have it smothered.

Get the full or half order with eggs, hash browns, grilled onions, cheese and sausage that’s then topped with country gravy and green chile or half and half.

Santiago’s – anonymous
This place is an institution in Colorado, with many locations. We still go to the one on Leetsdale Drive where you can count on standing in line, starting outside, to order one with whatever the chef’s choice of meat is that day including ham, bacon, chorizo, German sausage or breakfast sausage. They can be had smothered or “deluxed.”

Sol Mexican Cocina – IGTD staff
“Heuvos Mexicanos” are mixed with cotija cheese, refried black beans, avocado, pico de gallo, tequila-pickled jalapeno and scallions. We don’t know if they are still served in the red tortilla but it sure made for an out-of-the-ordinary plateful.

Taco Mex – Anonymous
This is our go-to place for street tacos and chile rellones, so when someone told us they love the breakfast burritos there, we believe they’re as good and straight forward as their other dishes. Get them with chorizo, bacon, ham or without meat.

Teller’s Tap Room & Kitchen – IGTD staff
It’s been a while since we had their weekend brunch offering with potato, egg, cheddar and the option of adding bacon, sausage or chorizo, smothered in green chile. But we remember it being delicious. They say it’s a “guest favorite” and we can see why.

The Universal Jessica L’Whor  (as told to us during one of her popular “ask a queen anything” sessions)
The U Breakfast Burrito has jalapeño, cheddar and pepper jack grits, pulled pork, over easy or scrambled egg, habanero honey, smothered with pulled pork green chile, and cilantro. Can be made vegetarian.

 

Editor’s Choice Best Breakfast Burritos in Colorado:

Carm & Gia Metropolitan – The Aurora Borealis has scrambled, cage-free eggs, cheddar jack cheese and potatoes in a flour tortilla or as a bowl. Get it with an amazing number of options: sausage (breakfast, chorizo or turkey), carnitas, barbacoa, carne asada, ham, bacon, or grilled hot dog medallions! They top it with Gia’s Green Chile, lettuce, sour cream and pico de gallo with a side of frijoles.

 

Dirt Coffee Bar on the Mosaic Campus in Denver – Their breakfast burritos are made with potatoes, eggs, green chile and cheese and can be made with bacon, sausage, chicken chorizo, gluten-free veggie, veggie and vegan chorizo. The business is a local, non-profit social enterprise training, employing and empowering neurodivergent individuals. They also have a location in Littleton.

Good Times – I know, I know, they’re from a chain but dang, they are just so delicious! Thank goodness these little babies are back at all locations. Get them with bacon, chorizo, sausage, or just egg. Each one has homestyle potatoes, shredded cheese and green chile from Hatch Valley, NM. They’re hot as heck to handle so get a bag of them and take them home or to the park to give them a few minutes to cool off.

HashTAG – It’s mongo and tasty with everything you’d want in a breakfast burrito. Tip: Get on the seating waitlist to get in quicker.

Prodigy Coffeehouse – Although not the most attractive, nor the spiciest breakfast burrito among the bunch, we just love what this place is all about, hiring young adults into paid apprenticeships to nurture future leaders through skills and experience. So, everything tastes better there.

Santos Cafe & Grill – Available in “hand-held” form to-go only, you can order them in various combinations of vegetarian, bean, bacon, chorizo, chicharron, carnitas, chicken, sausage or, our favorite, steak & egg. Each is available with the addition of cheese and with your choice of green chile heat level. Or, have a seat in their stylish little restaurant and get a smothered breakfast burrito with egg, potato and choice of steak sausage, bacon or chorizo.

The Little Diner in Vail – Whenever we go to Vail, we’re regulars at this unassuming, tucked away place. Their basic version starts with scrambled eggs, hash browns, diced green chiles, onion, tomatoes and cheese. You can add breakfast meats, avocado, salsa, or their pork green chile sauce to smother it. Do all that and it starts getting up to what you’d expect for Vail pricing. We recommend getting it as is and smothered.
