We’ve loved seeing him around town and, more importantly, we’ve been loving his food since the first time we met him at Civic Center EATS. Here we are in the last week of the 2019 Civic Center EATS season, so we wanted to revisit that first article. Matt is one of the Chefs of Civic Center EATS. Mathew Yamali, the owner of Roll It Up Sushi Truck:

Q: What kind of food does your food truck serve?
A: We do street sushi, and bowls, also sides.

Q: How did you come to get into this business?
 A: After cooking for 9 years for other people, I finally decided I wanted to work for myself! So I moved to Denver and within 6 months I had a food truck.

Q: Are there any little-known facts about you or your food truck you’d like to share?
 A: When I started it when I was 22, we were the only sushi truck in Denver, possibly Colorado. We were voted one of the number one “new food trucks you have to try” two years ago.

Q: What’s your favorite dish on your menu?
A: The Coney Island Roll. It has it all – bacon, shrimp, cream cheese, asparagus! You can’t beat it.

Q: What’s your favorite food truck other than your own?
 A: Definitely 100% Ba-NOM-a-NOM.  I’m pretty much best food truck friends with the owner.  We’ve hung out, partied in London, and talk daily about events and such.  Also it doesn’t help that her food is amazing.
