Don’t feel bad about drizzling another spoonful of sauce from Table Mountain Farm over your ice cream. There’s so much that’s good about it, it’s practically angelic. Now, the ice cream itself? Here are 10 things you need to know about Table Mountain Farm’s line of artisinal, handmade caramel sauces before digging in: 

1. The company is based in Boulder, Colorado, on 12 acres.

2. It’s a woman-owned business and that woman is Amanda Adare. who founded Table Mountain Farm in 2017.

3. The farm is “environmentally sustainable, focused on providing the highest quality of care to its animals while using the best land practices to regenerate their soil and capture as much carbon as they can,” according to the materials.

4. Everything is locally and sustainably sourced, helping to promote small, Colorado-based business, from the jars, to the designs, and the ingredients.

5. The flavors of the caramel sauces are: Vanilla Bean, Cinnamon Vanilla, Salted Dark Chocolate, Whiskey and their newest flavor, Irish Coffee made with fair trade coffee beans, homemade Baileys Irish Cream and whiskey. They are gluten-free, low-lactose, made with organic, fair trade and all-natural ingredients. See? Told you you can feel really good about them.

6. The In Good Taste Team received some jars to sample, gratefully, and loved them all. Whiskey was our favorite over butter pecan ice cream and Salted Dark Chocolate was dreamy over a good quality vanilla. We’d recommend enjoying all of the flavors over more subtle flavors of ice cream to let the flavors shine through. But we can also imagine any of them dolling up some bread pudding or brownies. The card that comes with the sauces also suggests drizzling the sauce over chevre (goat cheese, naturally) and inside s’mores!

 

7. Just to be even more impressed by Amanda and her family – she’s from Manhattan and studied political science but then worked in public health for the World Health Organization in Geneva, Switzerland. That’s where she met her husband, Andrew, who had attended grad school In Boulder. Amanda later ran a non-profit, Dairy in Developing Countries (DiDC), working with small dairy farms in Nicaragua and Kenya to improve animal care and land management to build financially self-sustaining farm businesses.

8. Initially, Adare made her Vanilla Bean Caramel Sauce in her own kitchen, using milk from her own goat herd that she was tending. She gave jars away as gifts and people loved them so she looked into selling them commercially. That led her to start using milk from a regulated dairy facility. She started out selling that first sauce at the Boulder’s Farmers markets and they were a big hit.

9. Each four-gallon batch is hand-stirred and takes more than four hours to produce. The sugar is 100% organic and fair trade. Vanilla beans are sourced from farmers in their country of origin. Cinnamon sticks are supplied by a Colorado-based spice company. And all materials are imported from Indonesia and Ceylon.

10. Perhaps best of all, (including just how good the sauces are), it was just announced that Table Mountain Farm Goat Milk-based Sauces are now available in the specialty sections of Whole Foods in their Rocky Mountain region, from Colorado to Utah to Kansas City. But you can also buy them on the Table Mountain Farm website.
