Going Hog Wild at the Pig and the Sprout

In an area we didn’t even know was an area, in much lower downtown, the Berkshire’s Andy Ganick has gone hog-wild again. The pig-centric Berkshire has been going strong in the Stapleton neighborhood for years. But way, way back, while on a long road trip, Ganick began formulating The Pig & The Sprout, writing notes on any scrap of paper that could be scrounged. The concept would make the best of both the meaty and veggie world.

We got a sneak peek at The Pig & The Sprout before it officially opened, receiving sample-sizes of several dishes. All were delicious – I’ll just get that out of the way up front. Just keep in mind as you look through these photos that these are not the actual portion sizes.

One side of the menu is devoted to The Pig like Smoked Brisket Poutine, Crispy Buffalo Pig Tails (from meat found just behind the pig’s tale – don’t think about it) and burgers. The Sprout side includes Shishito Peppers, Fish Tacos, Tandoori Chicken and Seared Sunchoke. In an area that was, well, who knows what, that now is home to downtown’s only King Soopers, high-end lofts and promise, the restaurant will probably become a big hit, as much of a destination dinner as it will be a neighborhood hang-out.
