That time I was invited in to the Test Kitchen belonging to Snooze an A. M. Eatery to try some of their delicious creativity. It was pretty dreamy. Over a luscious latte, I happily sampled each of the pancakes. Watching Jon Schwartz, regional head chef wax poetic about pancakes while flipping them expertly, I had to ask him, “What are your tips for making fluffy pancakes at home?” And guess what? He told me and it was information I’d never heard before. Of course, it’s always great to have a pro make pancakes for you at Snooze (more on that, below), but when you’re breakfasting at home, take Jon’s good advice.
The Secret to Fluffy Pancakes at Home
- Start with a recipe that has buttermilk to help you make fluffy pancakes plus a little oil or butter to help prevent sticking.
- Don’t wait to see the bubbles appear because that’s probably going to mean the pancakes are overcooked on the skillet side.
- Instead, when the pancakes go from a glossy edge to a flat (not shiny) edge, then flip them.
- Make sure your surface is well-seasoned. Jon gets to work early to make sure his grill surface is perfectly seasoned to handle the pancake making for the day ahead.
- Better yet, Jon recommends buying a Black and Decker Griddle and setting it to 350 degrees. The black Teflon surface at that temperature works like a charm.
