In a sea of slick, new high-rises, Woodie Fisher is a bricked oasis. The restaurant occupies the historic Hose House No. 1, one of the first fire stations in Denver. Opened in June of 2019, the place pays homage to its history with interesting touches like a light fixture/art piece made of old fire hoses, exposed walls, and big doors opening out onto the front patio where the firetrucks surely exited on their way to save other old Denver buildings. Now, it’s where you can drink and dine al fresco. We visited Woodie Fisher not long after it opened. Here’s our take, in pictures!

Executive Chef Franco Ruiz is all about seasonal, local, and sustainable and it shows.

What to eat at Woodie Fisher:

Our favorite item came right at the start with the High Plains Wagyu Tartare – pickled mustard seed, egg yolk, jam, crispy potato chips and chive ($12). It was tender and delicious with perfect umami!

Porchetta di Testa – Local arugula, shaved pork, roulade, cured lemon, vinaigrette, grated parmesan ($12). The pork was like buttah.

Charred Broccolini Flatbread – Ricotta, sweet & sour peppers, chili flakes, arugula ($13). Look at those dough bubbles! You’ll have to fight us for them.

Smoked Pork Short Rib – White bread and Chicharrone crumble, bread & butter pickle relish, cheddar grits ($26). We loved the contrast between creamy grits with chunky but tender pork.

Culotte with WF Steak Sauce, hasselback potato, soured cream and charred leeks ($27). It’s a meat and potato-lovers’ dream. In other words, it’s our dream.
Now, get a load of the interior at Woodie Fisher:

We loved this chandelier made out of bike gear chain. So clever!

The raw, exposed walls and brown, tufted banquettes are a great juxtaposition.

At first, you look at this light fixture and wonder what you’re really seeing. Then it hits you – it’s fire hoses.

Be part of the action at this table in view of the open kitchen.

Kind of sexy, kind of sleek, kind of glamorous, kind of casual.
What’s even MORE new at Woodie Fisher?
Lunch! Word has it that offerings include sandwiches (and a brat if you lump bratwursts into the sandwich category). Options include the WF Burger with Havarti cheese, smoked bacon, crispy onions, relish and Worcestershire aioli; Chicken Shawarma with quinoa tabbouleh, dill yogurt and shaved lettuce; Crispy Steak Torta with bean puree, panela cheese, salsa macha and avocado, and more. Oh, and that High Plains Wagyu Tartare will be available too! Have that. It all looks so good to us!

Heck, if you take a long enough lunch, you’ll meander right into happy hour which starts at 2:30 and runs till 6pm. Then again from 8:30pm-close. Just spend the day there, it’s fine.
