But if anyone’s up to it, it’s Chef Kevin McCormick, the Culinary Director for many of the restaurants at Denver Union Station. Chef Kevin and his team are responsible for Baumé dessert bar, The Cooper Lounge, Terminal Bar, Terminal Bar Kitchen, Milkbox Ice Creamery, Pigtrain Coffee Co. and big events held in Denver Union Station. There are other restaurants in the building too but they are operated independently.
Chef Kevin talks about how he creates the different items, manages all those offerings, and makes sure everything is implemented cohesively. In other words, he tells us how he manages all those moving parts, maintaining the high quality.

Before coming to Denver Union Station, Chef Kevin had an illustrious career at some prominent restaurants around the country. But his real interest in the restaurant world and in baking and pastry-making in particular, started at a very young age. He tells us that story too. It has been an interesting path for him.
