Okay, maybe the initial reason I was drawn to doing a podcast with the founder of Lavender Coffee Boutique was because of the name. I mean, I love lavender, and coffee, and boutiques. But I soon learned there’s so much more to the business than just an appealing name. Meet Lindsey Sozio, my guest on this episode of the In Good Taste Denver Podcast.

As Lindsey explains, Lavender Coffee Boutique provides what she describes as “an intentional coffee experience.” Yes, they are a coffee shop and a retailer. But as she says, “We think of ourselves as a way to make your first good decision of the day, having a healthier coffee and a healthier routine.”

She explains what it is about the ethically-sourced beans they roast that is lower in acid and is more gut-friendly. She also tells us about her current location at 1219 S. Pearl St. in Denver and a second in the works in Greenwood Village.
Lindsey came to the coffee business in an unusual way, from a completely different industry yet one that has helped her in many respects along the way. Her husband, who co-owns the business, lends his own expertise despite also coming from a path very different than coffee.

We learn what’s different about the approach, not only to how the beans are roasted, but to the experience of coming into the Lavender Coffee Boutique, whether it’s to grab a quick drink, purchase something, or settle in and hang out for a while.
