To most of us, a food truck is just a great way to grab a quick bite without having to interrupt our fun. Like at a concert in the park. Or at a brewpub. Or during our workday, which is probably not a fun thing, but you get the idea. Those food trucks are tiny restaurants and that mean lots of dreaming, hard work, planning and prep just like a brick-and-mortar restaurant. Here, we continue our series, getting to know the people inside those rolling restaurants. This week, we meet Thanos from Gyros King.

Meet Thanos Lemonidis, owner of Gyros King:

Q: What kind of food does your food truck serve?
A: Greek and Cypriot Food.

Q: How did you come to get into this business?
A: I’ve wanted to do this for over 12 years and I was told I was crazy. I was doing a project in California and would always go to this truck and loved it. Better late than never I guess. My Dad had a bar down in southeast Denver and we shut it down because of a landlord dispute. But he’s not one to sit around so I came up with this crazy idea to do the truck.  We now have two and are building a third. Not bad I guess. My Dad’s a fixture on truck #1.

Q: Are there any little-known facts about you or your food truck you’d like to share?
A: I’m kinda low-key and quiet! My Dad is my hero and wish I did more for him to make his life easier.

Q: What’s your favorite dish on your menu?
A: The Greco! It’s my Dad’s own gyros recipe. 

Q: What’s your favorite Colorado food truck other than your own?
A: Barbed Wire Reef because it’s different. And Rock N Lobster Roll ROCKS!
