I scream, you scream, we all scream for ice cream. Were truer words ever said? Ice cream and summertime go hand in hand (and dripping all over your hand, sometimes). So naturally, here in the midst of summer, we’re talking ice cream with a woman who has a very interesting story and a very bright food truck.
Meet Erika Thomas, Boss Lady of High Point Creamery’s food truck, Big Pinky:
Q: What kind of food does your food truck serve?
A: Ice cream made with natural ingredients like fresh basil, home-made cookies and tons of berries.
Q: How did you come to get into this business?
A: It has been a round-about route. I’ve been an actress, a car dealer, and now I make ice cream. I also attended Penn State’s ice cream school to really learn my craft. My husband Chad and I recently opened our third High Point Creamery shop. But mostly, I have a passion for ice cream and making people happy!
Q: Are there any little-known facts about you or your food truck you’d like to share?
A: My then two-year old daughter Ruby named our truck, she asked “where Big Pinky at?” and the name stuck.
Q: What is your favorite dish on your menu?
A: Mint Chocolate Bark. It shows off what we do best, Colorado cream, fresh mint and hand shaved Belgium chocolate, all combined it makes a flavor that everyone knows surprising.
Q: What is your favorite food truck other than your own?
A: Our friends at Sweet Cow. I’ve been friends with Drew, the owner, for years. We may be competitors but most importantly, we’re friends and are really supportive of each other.
