Well, hello John! Look, everyone, it’s John Prom, owner and executive chef of WeChef Kitchen Food Truck.

Meet John Prom, Executive Chef and Owner of WeChef Kitchen

Q:  What kind of food does your food truck serve?
A:  We primarily serve Asian Fusion fare.  Some of our food is a fusion between a dish that is traditionally from another region of the world that we fuse with Asian flavors, such as our Asian Street Tacos or our Asian Nachos, and some of our food is simply our take on traditional Asian dishes, such as our Vietnamese Banh Mi sandwich that we call ‘The Bomb Mi’… because it’s the bomb!
Q:  How did you come to get into this business? 
A: I was literally raised in a restaurant.  I am the youngest of 6 and all but one of my siblings own Asian Restaurants.  I did go to college where I earned a Bachelor’s degree in Business Administration/Management, but I’ve found that my heart and soul belong in the kitchen.  I’ve worked for many, many years in various restaurants, but about 3 years ago, I just couldn’t continue cooking other people’s recipes and I decided to strike out on my own!

Q: Are there any little-known facts about you or your food truck you’d like to share?
A: While our food truck only serves Asian Fusion fare, we also cater and can work with any kind of menu you’d like!  We have catered weddings, graduation parties, corporate events, holiday parties, and have served everything from Italian, American, Cajun, Mexican, and of course Asian dishes.  Anything you want, we can do!

Q: What’s your favorite dish on your menu?
A: Now this is where my wife and I disagree.  I’m a big fan of our WeChef Fried Noodles.  It’s a stir-fried noodle dish that is very similar to Mi Goreng (a traditional Indonesian dish).  My wife however loves our Asian Nachos.  They consist of fried wontons with marinated steak or chicken, homemade Asian slaw, drizzles of sweet soy and Sriracha mayo, that’s topped with cilantro, green onion, and sesame seeds.  Both are top-sellers on our menu.
Q:  What’s your favorite Colorado food truck other than your own? 
A: Oh, there’s so many good ones!  We love the ice cream from Happy Cones and Em’s Ice Cream, we love sandwiches from The Comforts of Home, we love the fruity goodness of Ba-NOM-a-NOM, (one of the IGTD Chefs of #CCEATS) and can’t pass up an Arepa from Arepas House.  One of the best parts of owning a food truck is trading food with the other trucks!!
