When Erika Hildner’s Bean Machine Mobile Coffee food truck rolls up, people start to perk up, even before they get a cup in hand. That’s why we’re feeling very energized about profiling Erika, who appears regularly at Civic Center Eats.

Meet Erika Hildner of Bean Machine Mobile Coffee
IGTD: What kind of food does your food truck serve?
Erika: I serve a full line of coffee, espresso based drinks, and smoothies.
IGTD: What led you to open a mobile food business?
Erika: I’ve always been into VW busses and a really good coffee. Six years ago, I was on craigslist looking for parts for a different VW bus and saw the coffee bus for sale under a different name and ownership so I took out a loan, quit my job, and here we are!
IGTD What do you feel is unique about the food you serve?
Erika: We serve responsibly-sourced products from two different local roasters, Copper Door and Coda Coffee. Just trying to serve really good local coffee out of a really adorable bus.
IGTD: What’s an unsung item on your menu that you’d really encourage people to order?
Erika: The London Fog is awesome. Earl grey tea, steamed milk, and a little bit of vanilla on a cooler day – that’s the jam!
IGTD: What’s your favorite Colorado food truck to eat from?
Erika: I’m a big fan of Pasty Republic.
