Pizza baked quickly and expertly in a wood fired pizza oven is a treat we enjoy at restaurants. But can you imaging creating the same experience from a food truck? Tilford’s Wood Fired Pizza does it all the time. In our continuing series featuring the people inside the food trucks at Civic Center Eats, we talk to the owner and the general manager.

Meet Steve Burton, owner, and Eric Montes, general manager of Tilford’s Wood Fired Pizza:
IGTD: What kind of food do you serve?
Steve: We make quick, 10″ wood fired pizza.

IGTD: What’s the story behind how you got into the food truck business?
Steve: After 10 years in non-profit leadership, my wife Judy and I were ready to get back into business for ourselves. The food truck concept is one of the fastest growing segments of the food industry and we wanted to be a part of it with great pizza that is fresh from the fire and fast for the customer.
IGTD: What do you feel is unique about the food you serve?
Steve: The first key to our success is our dough. The dough being baked in a wood fired oven at a high temperature is what makes our pizza unique. The second key is our spice blend that we use in our sauce. And the third key is high quality toppings that are locally sourced when possible.

IGTD: What’s an unsung item on your menu that not that many people order but you think is awesome?
Eric: My favorite would have to be our prosciutto pie. It has garlic-infused olive oil as the base, mozzarella and goat cheese-covered slices of prosciutto. Italian seasonings are cooked on top and it’s dressed with arugula and shaved Parmesan. Just a little cracked black pepper and your ready to feast.
IGTD: Share the food truck love a little – what’s your favorite food truck to eat from here in Colorado, other than your own.
Eric: One of my many favorite food trucks here in Denver would have to be Dos Gringos Tacos. In my opinion they have great presentation with perfectly-seasoned meats. The food is well-balanced, decently priced and the quick taco bowls always hit the spot!
