Get to know Koni Guichon Rambhajan, owner and chef of the Mile High Caribbean food truck, which makes an appearance at Civic Center Eats on Tuesdays.

IGTD: What made you want to get into the food truck industry?
Koni: I was drawn to get into the mobile food business because of my passion for food and the spirit of service.
IGTD: What do you feel is unique about the food you serve?
Koni: It’s a fusion of all that I am. I’m from Haiti but share a mixed heritage. My Mother was Chinese/Cuban & my Father Lebanese/Haitian. I most certainly incorporate and express all my cultures in my passion for food. Food in my culture is an Artform. I’ve never made the same dish the same way twice because how it turns out depends on my mood.

IGTD: What’s an unsung item on your menu that you’d really encourage people to order?
Koni: Curry Pork Red Beans and Rice!

IGTD: What’s another Colorado food truck that you love to eat at?
Koni: NOLA.
