As we near the end of Civic Center EATS for 2019, we’re taking a new look at a food truck chef we interviewed for the 2018 season, Jason of J Street. Some exciting new things happened to him this past year so let’s find out what he’s been up to. Then, be sure to check him out at Civic Center EATS before the season ends, October 10.
Meet Jason Bray, Executive Chef and owner of J Street food truck.
Q: What kind of food does your food truck serve?
A: J Street serves seasonally and globally inspired street food. I change my menu every six weeks or so. To elaborate, I completely change my theme! For example, this year we have done Chinese Takeout, Tacos, American Classics, and Oktoberfest!
Q: How did you come to get into this business?
A: I have been a chef for over ten years. I was an executive chef for a hotel before I decided to do my own thing. I have worked in restaurants, hotels, as a personal chef, on a cruise ship in Hawaii, and at a fly-in-fly-out adventure lodge in Alaska. It was time to work for myself!
Q: Are there any little-known facts about you or your food truck you’d like to share?
A: Last year we are on track to sell over 4,000 pounds of Brussels sprouts at just our public events! As our t-shirts say, “Everyday we’re Brusselin”.
Q: What is your favorite dish on your menu?
A: Brussels. I change my menu every month but I do Brussels sprouts that match the theme every month. For example, American (crispy Brussels with our signature root beer bbq sauce, smoked pork belly, and carmelized onions), Irish Pub (crispy Brussels with beer mustard sauce and pickled mustard seeds), Thai (crispy Brussels with sweet chili soy glaze, peanuts, and cilantro), and Hawaiian BBQ (crispy Brussels, sweet Hawaiian bbq sauce, and pickled pineapple).
Q: Looks like you have recently expanded. Tell us about that!
A: This year, we added a new Food Truck to our brand: Hunje (pronounced HOON-JAY). It’s an Asian-inspired smoke house featuring my spin on classic Asian dishes, many of which have a smoked element as well. We carry our smoker with us everywhere we go, so, more often than not, you can follow your nose to Hunje! It’s been a great first year for us and we’ were even featured on The Cooking Channel’s “Food Truck Nation.”

A: Simply Pizza.
